We had friends over to watch football on 2 screens + the iPad lol. NFL Sunday Ticket is an amazing thing! I had a half marathon yesterday in Davidson, NC – the Run for Green to support their land conservation fund. It was hilly – and I completely hit a wall for the first time during a race – it SUCKED. There’s nothing else I can do but take it as a training run, learn from my mistakes, and MOVE ON! 🙂 The pup and I went for an evening run tonight and my legs were not NEAR as sore as they should be, lol. So enough about me, let’s talk food!! I got this next recipe from www.100daysofrealfood.com and I added potatoes. Yum!
So once you’re chicken and taters are done – I let it cool and take the chicken off the bones and throw in the bones, the chicken neck I reserved, the onion used to cook the chicken in originally, celery, and carrots. I then added 2 bay leaves, thyme, and parsley, fill the crockpot back up with water (all the way). Cook on low overnight (8-10 hours) – strain and refrigerate and freeze extras! You can also put some in ice cube trays for flavor when cooking just about anything! My grammy will be proud of me for this one! 🙂

Take a 100% whole wheat tortilla – put it in an ungreased skillet and cook on high a minute or two each side. Then add olive oil, basil, and italian seasoning to the crisped tortilla, top with one slice of reduced fat mozzarella cheese – then add any veggies you have on hand – I used mushrooms and onions – Cook for 10 minutes at 400 degrees or until cheese is melted! I literally have added every veggie known to man… cabbage, broccoli, tomatoes, baked sweet potatoes, etc… use whatever you have in your fridge! SO GOOD!
How to make a banging salad:
Throw anything you have in the fridge in a bowl and devour the goodness! Here I have leftover steamed green beans from my last post, raw mushrooms, tomatoes, cucumber, zucchini, avocado, and a spinach base – I topped with Olive oil, lemon juice,stevia, and pink himalayan salt! BOOM.

I’m not much of a decorator, I’m guilty of bare walls, & def lack the Martha Stuart skills, but I love Fall! Everything about it!
