–> That’s how I felt yesterday. I baked acorn squash and roasted Kabocha seeds, created a delicious southwest taco black bean filling for my acorn squash, cooked cabbage soup in the crockpot, and created this gem!
Vegan Peanut Butter Pumpkin Ice Cream
-Mix 1 TBS organic canned pumpkin
-2 TBS Peanut Butter & Co White Chocolate Wonderful Peanut Butter – can be found at https://ilovepeanutbutter.com/
-1 Frozen Banana
-dash of Pumpkin pie spice and cinnamon
Mix all this amazingness in a food blender or vitamix then put in bowl and freeze for 15 minutes! Top with baked kabocha squash and add your MAGIC HARD SHELL!! (see below for both)

Mix 1 TBS Melted Coconut oil with 1 TBS Vegan Chocolate Meal Replacement Shake then pour on cold ice cream to allow it to harden.

Sooo– For about a year I have been searching for Kabocha squash thanks to all the kabocha #foodporn from www.stuftmama.com lol! I am not a squash fan.. I keep buying it and trying different recipes and I just can’t do it.. But this was pure amazing!!!
So what IS Kabocha??
Kabocha squash is a Japanese pumpkin and when roasted is a similar texture to sweet potato (which is maaaa favorite!!)
-1 cup kabocha is only 40 calories with only 7 grams of CHO vs 16 with butternut squash.
-Kabocha is full of beta carotene (your body converts that to vitamin A in your body for eyes, hair, and skin – Double score!
-I’m anemic and kabocha gives me a good source of iron, and vitamin C (Vitamin C helps your body absorb iron better in your body as well).
So now that we know it’s #Delish and #nutrish how do you make it??
-Preheat oven to 400 degrees
-With a sharp knife cut the top off (please don’t slice your hand off ✋because this is a beeeotch to cut!
-Then slice in half, scoop out the seeds and save seeds to roast
-Cut in wedges
-Toss wedges in 2 TBS melted coconut oil, pumpkin pie spice, cinnamon, and salt
-Cook on foil lined cookie sheet for 30 minutes flipping once halfway through
-Top with melted peanut butter, pure maple syrup, or coconut shreds for an amazingly sweet and satisfying dessert! #feelslikeimcheating #healthycheats #eattogrow #kabocharecipe #foodporn #veggiesfordessert
