* I got the inspiration for this recipe from Annie Chesson’s The Garlic Diaries recipe for BLT Chicken Salad Stuffed Avocados*
Chicken Salad
- 1.5 cups shredded rotisserie chicken
- 1.5 cups cottage cheese (I used fat free)
- 12 slices turkey bacon cooked
- 2 Roma tomatoes
- 1 cup shredded romaine lettuce
- {next time I will add 1/2 cup sliced grapes}
Mix ingredients in bowl (crumble bacon), add salt and pepper, and serve over bed of salad or add it into a half an avocado!
