Well helllloooo!
I went to a restaurant in Charlotte a few months ago, called Fern. It was a delicious Farm to Table organic and vegan friendly adorable restaurant. I ordered a Buddha Bowl and loved every last morsel of it. After doing some research – a Buddha bowl is basically a dish made up of roasted or steamed veggies, some time of grain, and a sauce. I had black rice in my FERN Buddha Bowl – so I decided to try that along with a variety of other veggies, and oh man was it delicious!

Now here is mine:
Totally not as pretty lol! I used black rice, fresh green beans, cabbage, purple potatoes (found them at a local grocery store for the first time), zucchini, sweet potatoes, kale, onions, garlic, and a little EVOO and Gluten free organic soy sauce. Steam all the veggies – cook the rice separately – then add everything together! It was so delicious! I topped with some very ripe avocado mixed with a bit of EVOO and himalayan salt and black pepper! Delicious! Give it a try – don’t be afraid to just try new things!
So minus the fact that my eyes are barely open, I love this pic of me and the boy! We had such a great time camping on the beach with our friends and our pups over Labor Day weekend! I’m also liking the tummy definition from T25 – my 25 minute butt kicking workout! Here I am below rocking my T25 gear! I got it free from having awesome co-workers and working hard for our July team challenge and helping people reach their goals – that’s my FAVORITE part about my Job!

I’m a ketchup nut – I actually only use it with eggs now though – which IF YOU KNOW ME AT ALL – YOU KNOW THIS IS HUGE! So here’s how to make this beauty:
Sautee one onion and 1-2 cups cabbage in a skillet (with just a little bit of EVOO, a little goes a long way) then take 1 egg, 3 egg whites, a touch of milk – whisk and cook on medium heat until the egg mixture bubbles – then add the sauteed cabbage and onion (not all of it) to one half of the omelette – flip in half and cook a minute longer – serve it up hot and add a little green onion and avocado and hot sauce if you like spice like me! It was so good! I used the remaining cabbage and onion as a side dish for my lunch later that day.
YUM! This is my Kitchen Sink Crockpot Recipe – because I made it by throwing everything but my kitchen sink into a crock pot lol -it turned out really good! I don’t know exact measurements – because that is the fun of experimenting with cooking – use what you have – YES I KNOW HOW TO COOK ON A BUDGET!
In a crockpot I threw – 2 roughly chopped sweet potatoes, 1/2 head of cabbage, 1.5 onions, 3/4 bag white beans (rinsed and soaked overnight), 6 Chicken tenderloins, some leftover ground turkey, 3 cloves minced garlic, and 1 green bell pepper. It was totally delicious! I added himalayan salt, ground black pepper, and mrs. dash garlic blend of spices. You can use whatever seasoning you like! I added a bit of cayenne pepper for a kick as well! It was so good – I cooked it on low overnight and woke up to a yummy smelling meal!
IT’S PROGRESS PIC TIME! I’m starting to see some awesome definition in my tummy, biceps, and legs. YESSS! I feel so great! It didn’t happen overnight I’ve been working HARD for months – but you know what – I enjoy doing it, this is a lifestyle change and I have NEVER felt happier or healthier. I only eat clean natural foods – if you can’t pronounce the ingredients in a product – DON’T EAT IT – if it has a commercial, IT’S PROCESSED and not good for you – shop along the perimeters of the grocery store as well! JUST A LITTLE BIT of progress is still progress – it could be something as simple as you eating better that week, or maybe you can button a pair of pants a little better! The scale does not tell you everything people – I went down a jean size and only lost one pound a few months ago – track your circumferences.
This is me- a hot sweaty mess after T25 and my chocolate meal replacement shake that I had for dinner to refuel me for the day! I seriously love my chocolate fix so much! I added chocolate Pb2, banana, and almond milk to this one then topped with coconut, hemp seeds, and pecans! YUM.
FINALLY – Want to know how to make the most tender delicious fish ever?
It’s so easy – I buy a bag of individually wrapped tilapia then thaw them and individually wrap them in foil with fresh lemon juice and cracked black pepper – seriously THE BEST FISH EVER! Bake at 400 degrees for 20 minutes! I served with fresh steamed green beans and black rice! Deeeee-lish!
Give it a try! Please – don’t be afraid to try new things in the kitchen – that’s how some of my favorite meals come about! Get creative!
